Charred summer peaches with creamy burrata & fresh herbs

There’s something effortlessly beautiful about a dish that celebrates simple, seasonal ingredients. This recipe is one of my favourite summer combinations - juicy peaches warmed on the grill, creamy burrata, buttery avocado, and crunchy walnuts all brought together with fresh herbs and a drizzle of balsamic glaze. It’s vibrant, elegant, and perfect for sharing, whether served as a light lunch, a dinner party starter, or a centrepiece for a relaxed summer table.

Ingredients
  • 4 large peaches, halved and pitted
  • 3 balls of Burrata
  • 1–2 ripe avocados, sliced
  • 3–4 cups baby spinach or rocket (arugula)
  • ½ cup toasted walnuts, roughly chopped
  • ⅓ cup fresh basil leaves (or substitute with fresh mint)
  • 3 tablespoons extra virgin olive oil and 2 tablespoons balsamic glaze
  • 1 teaspoon flaky sea salt and ½ teaspoon freshly cracked black pepper
  • Edible flowers and crushed pistachios for a colourful, elegant finish (optional)

Instructions

1. Grill the peaches
Preheat your grill until hot. Place the peach halves cut-side down and grill until deep char marks form and the fruit softens slightly, allowing the natural sweetness to intensify.

2. Prepare the ingredients
Remove the peaches from the grill and slice half of them into 3–4 wedges. Slice the avocado and roughly chop the toasted walnuts.

3. Build the salad base
Spread the baby spinach or rocket across a large serving platter. Arrange the burrata balls on top and gently open the centres to reveal the creamy filling.

4. Assemble the platter
Nestle the warm grilled peach halves and slices around the burrata and greens. Add the avocado slices and scatter over the toasted walnuts and fresh herbs.

5. Dress and finish
Drizzle the platter with olive oil and balsamic glaze, then season with flaky sea salt and freshly cracked black pepper. For an extra special presentation, decorate with edible flowers and a sprinkle of crushed pistachios.

Serve immediately while the peaches are warm, the burrata is creamy, and the flavours are at their freshest.

Moving through cancer: How exercise helped me heal

When I was diagnosed with breast cancer, I knew life was about to change. Surgery, chemo, radiation... it all sounded terrifying and exhausting. But through all of it, one thing kept me feeling like me: moving. Before cancer, I was always busy; work, gardening, the gym, weekend runs. I didn’t sit still much.
