After a long day of fasting from sunrise to sunset, nothing feels better than a homemade meal that brings everyone together.
Kofta bi Seniyah, which means “Kofta in the pan”, is one of those dishes that fills the house with warmth and the most amazing aromas. Juicy kofta patties, golden roasted potatoes, sweet tomatoes, onions, and peppers all simmer together in a rich, flavourful tomato sauce.
It’s hearty, comforting, and full of memories. The best way to enjoy it is with fluffy rice or fresh pita bread, just like we always do. I hope one day, when you make it, it reminds you of our family iftar table and the love that goes into every bite.
Ingredients
For the Kofta:
- Plant-based mince beef (or mince beef)
- ½ onion, grated
- ¼ cup breadcrumbs (I prefer to use Sainsbury's Cranberry, Orange & Chestnut Stuffing for added flavour)
- 2 cloves garlic, crushed
- 2 tbsp chopped fresh coriander
For the Vegetables & Sauce:
- 3 potatoes, peeled & sliced into ¼-inch rounds
- 3 bell peppers, sliced
- 2 onions, sliced
- 3 tomatoes, sliced
- 3 tbsp tomato paste
- 2 cloves garlic, crushed
- 1 tbsp pomegranate molasses
- 2½ cups vegetable broth
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp vegetable oil
Instructions
Step 1: Preheat the Oven
- Set your oven to 375°F (190°C) to get it ready.
Step 2: Prepare the Kofta
- In a large bowl, mix together the grated onion, plant-based mince (or ground lamb), breadcrumbs, garlic, and coriander until well combined.
- Shape the mixture into patties and place them in an oven-safe casserole dish.
- Bake for 20 minutes.
Step 3: Roast the Potatoes
- Toss the sliced potatoes with salt and oil.
- Spread them on a parchment-lined baking sheet.
- Bake for 30 minutes, flipping halfway.
Step 4: Layer the Ingredients
- Arrange the baked kofta patties, roasted potatoes, sliced onions, tomatoes, and bell peppers in a circular or linear pattern, depending on the shape of your baking tray.
Step 5: Make the Sauce
- In a bowl, mix the tomato paste with vegetable broth, crushed garlic and pomegranate molasses.
- Add salt and pepper, stirring until smooth.
- Pour the sauce over the casserole, making sure everything is evenly coated.
Step 6: Bake Everything Together
- Cover the dish with foil and bake for 45-50 minutes.
- Remove the foil for the last 10 minutes to allow the top to caramelize slightly.
Step 7: Serve and Enjoy!
- Serve warm with fluffy rice or fresh pita bread.
